Favorite Fall Luncheon.

My friend DeAnne was a great example of gathering friends for lunches.  She was always so good about entertaining and having people over.  This time of year will forever remind me of DeAnne,  Katie, Tara and the crew.  They have all moved on since.  I will forever consider them such dear friends and great examples.
DeAnne introduced me to my favorite fall soup/lunch.

This one is for the records.

Pumpkin Soup:
Sautee 1/4 onion in bottom of pot then add
1 can of pumpkin pie mix
2 cups chicken broth
2 cups heavy cream (I substitute some milk in so not quite as rich)
1 teaspoon of ginger

Spinach Salad:
Spinach
sliced pears
candied pecans (any kind of nuts works really)
feta cheese
craisins

and a blush wine salad dressing of your choice.

Simple, simple....delicious, delicious.

I also serve artisan bread of choice (I always love garlic loaves)

and for Dessert....
orange sherbert with sprite.
(the pumpkin soup tastes like dessert so I go simple with the actual dessert).

Add a simple 4 inch kale for you centerpiece.....(I embellished with roses from rose bush out front).

There you have it.  About 10 minute prep time.  Simplicity is my middle name.  Thanks to DeAnne for always being the best host of all time, and for sharing her recipes with me.:)
