While I am on the topic of quick and simple.
This brunch is a favorite.
Swedish Oatmeal
2 cups of vanilla yogurt to 1 cup of quick dry oats (I often double this)
Add mixed berries of choice. I often use blueberries, raspberries, or any seasonal berries on sale.
add a handful of almonds
Mix it all together and sprinkle a tad of cinnamon on top.
Pear Puff Pastries
(I got this one from my friend Janae a couple years ago and love it this time of year especially).
Buy a package of frozen puff pastries
Cut into rectangles
follow pastry thawing instructions
Top with a light coat of melted butter (I even just use spray butter if extra in a hurry)
Add a few thinly sliced pears on top
Sprinkle cinnamon and sugar on top
Bake puff pastries as directed
Prep time about 10 minutes.
Serve with a big glass of orange juice and you have a simple, healthy, gourmet brunch.:)
